Leftover bagels, cubed
3/4 cup cubed cucumbers
1/2 cup sliced red onion
1/2 cup extra-virgin olive oil
2 tablespoons red-wine vinegar
10 fresh basil leaves, shredded
2 large tomatoes, cut julienne
Instructions
Preheat the oven to 400 degrees F. Toast the leftover bagels on a cookie tray in the oven until crispy, 5 to 6 minutes. Toss the bagels, cucumbers, onions, olive oil, vinegar, basil and tomatoes together in a large salad bowl.
