Meat from 1 young coconut 1 c. 2-percent milk 1/2 c. canned coconut milk 1 graham cracker rectangle 1 tbsp. granulated sugar 1 tbsp. meringue powder 1/4 tsp. coconut extract

Combine all ingredients in a blender and blend until smooth and creamy. Pour into a glass and serve immediately or chill for later.
