Ingredients

  • 1 10-ounce package frozen chopped spinach, cooked in the microwave on high for 5 minutes
  • 2 13 3/4-ounce cans artichoke hearts, drained and chopped in a food processor
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup freshly grated Parmesan cheese
  • 1 cup grated pepper jack cheese

Instructions

  1. Preheat the oven to 350 ° F.
  2. Grease a casserole dish with a non-stick spray. Combine all of the ingredients but jack cheese in a large bowl. Stir well with a metal spoon. Sprinkle jack cheese on top. Place in the prepared casserole dish and bake for 30 minutes. Transfer to a chafing dish. Keep warm over a low flame. Serve with bagel chips. Makes about 4 cups.
