Ingredients

  • 1 stick butter, softened
  • 3/4 c. sugar
  • 1 tsp. vanilla extract
  • 1 c. all-purpose flour
  • 1 tsp. kosher salt
  • 1 c. mini chocolate chips
  • 1 pint vanilla ice cream, softened
  • 1/2 c. chocolate fudge sauce
  • 6 Dixie Cups and popsicle sticks

Instructions

  1. Make cookie dough: In a stand mixer, beat butter, sugar, and vanilla extract until smooth. Add flour and salt and beat until combined. Stir in chocolate chips. Transfer to a freezer to firm up, 25 minutes.
  2. Meanwhile, spoon vanilla ice cream into Dixie Cups, filling 1/3 of the bottom. Top with a layer of chocolate fudge sauce and transfer to the freezer until cookie dough is firm.
  3. Pat a layer of cookie dough into Dixie Cup and insert a popsicle stick.
  4. Freeze until firm, at least 1 hour. When ready to eat, peel apart Dixie Cup.
