Sand Dollar Cookies - PCOS-Friendly Recipe

Ingredients
- 1 tube sugar cookie dough
- 1 c. sugar
- 1 tbsp. ground cinnamon
- 1/2 c. thinly sliced almonds
Instructions
- Preheat the oven to 350 degrees F. As it heats, pour the sugar and cinnamon into a gallon-sized resealable plastic bag. Seal and shake until combined. Set aside.
- Open the sugar cookie dough and slice it into about 1/2-inch coins. Roll into balls and place in the bag. Seal and shake until they’re coated. Place each dough ball onto a parchment-lined baking sheet, flattening the slightly into discs. Top with five almond slices, arranged in a star shape with the narrow end pointing toward the center of the cookie (so it looks like a sand dollar).
- Bake 10-12 minutes, or until the edges are lightly golden.
