A simple warm salad with mozzarella and fresh herbs.

Ingredients

  • 2 tablespoons olive oil
  • 2 teaspoons red wine vinegar
  • 2 teaspoons lemon juice, freshly squeezed
  • 8 oz macaroni, (2 cups)
  • 1/2 cup fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 cup mozzarella, (4 oz), shredded
  • black pepper, freshly ground

Instructions

  1. In a small bowl, whisk together the olive oil, vinegar, lemon juice, salt and pepper. Set aside
  2. Bring a large pot of salted water to a boil over medium heat. Cook the macaroni according to the package directions. Drain the macaroni and transfer to a medium serving bowl. Add the basil and parsley and half of the dressing. Stir to combine. Let it sit for 1 minute to cool slightly, then add the mozzarella and the remaining dressing. Serve warm.
