Thotakura pulusu (stew) is a very simple and tasty dish spiced up with chillies and sweetened with jaggery. Pulusu is a clear broth (tamarind) cooked with vegetables and a spice is served as a side dish along with rice.

Ingredients
5 bunch Amaranth leaves
1 tsp chilli powder
1 sprigs curry leaves
pinch Fenugreek seeds
6 number garlic
4 number green chillies
pinch hing
1 tsp jaggery
pinch jeera
pinch mustard seeds
1 tbsp Oil
1 number onions
2 number red chilli
2 tbsp roasted peanuts crushed
as needed salt
as needed Tamarind juice
pinch turmeric
Directions
Wash amaranth leaves keep it aside.
Take a pan add oil red chilly dry,mustard,fenugreek,jeera seeds, now add garlic, turmeric, onions, hing, salt, add the amaranth leaves ,curry leaves cook till the leaves are cooking 90%.
Now add tamarind juice, jaggery cook for 5 min then add Roasted peanuts powder mix well cook for 2-3min and serve with roti or rice
