Stuffed Potatoes in Silky Tomato Sauce - Aloo Makhani is a classic delicacy made with amazingly stuffed potatoes cooked in aromatic and rich makhani gravy.

Ingredients:
Onions 100 g
Cashew nuts 50 g
Kashmiri red chilly 30 g
Green chilly 20 g
Butter 2 ts
Tomatoes 400 g
Sugar ½ ts
Whole garam masala (each) 3 g
Ginger garlic paste 1 ts
Kasoori methi 1 tb
Potatoes 250 g
Oil for deep fry
Green chilly chopped 2 n
Raisins chopped 20 g
Coriander chopped ½ bunch
Fried onions 1 tb
Salt
Almond chopped 20 g
Butter 1 tb
Directions:
Take the potatoes peel them and cut them into halves and scoop the potatoes and deep fry them.
Take a bowl add fry potato (scoped, boiled and mashed), chopped green chilly, raisins chopped, coriander chopped, fried onions, almond chopped, salt, mix it well and make a dumplings stuff this in the scoped potatoes.
Add whole garam masala in the muslin cloth and tie it .Heat butter in a pan and put the garam masala sachet in it, add onions cashew nuts, sauté it for 5 minutes, then add ginger garlic paste, cook this till raw flavour is gone.
Add colour giving chilli or Kashmiri red chilly, green chilly, tomatoes, mix it well and put the lid on and let it cook for 15 to 20 minutes in a slow flame (5 to 6 whistles). Let it cool down, remove the sachet & using strainer drain out the water and put the onion and tomato into the blender and blend them and make a paste and again strain it, after straining all, discard the seeds and peels of tomato.
Cook the strained paste of tomatoes and onions for 20 minutes then add salt, sugar as required , mix it and add toasted kasoori methi (crush it with hands) once it comes to boil switch off the flame. Cool it and store in small containers in refrigeration conditions. Use this makhani gravy in many veg and non veg dishes.
Heat butter in a pan add makhani gravy, add cream mix it well and add stuffed potatoes and put the lid on and let it cook for some time, then switch off the flame and serve it.
