Fruit Parfait - PCOS-Friendly Recipe
This Fruit Parfait is a PCOS-friendly recipe.
Nutrition per Serving
Ingredients
- 1 package strawberries (about 5 strawberries per person)
- 1 tablespoon plus 3 teaspoons sugar
- 1 cup heavy whipping cream
- 2 graham crackers
- 1 cup plain yogurt (Greek or Swiss yogurt recommended)
- Chocolate, for grating, optional
Instructions
- Wash your strawberries and chop off the stems and leaves. Chop the strawberries into quarters or smaller pieces. Put the strawberries in a medium bowl. Sprinkle 1 tablespoon of the sugar over the strawberries. Gently stir and set the bowl aside. In a separate large bowl, combine the cream and remaining sugar. Whisk until soft peaks form. In a plastic sandwich bag, crush the graham crackers with a sturdy, heavy object until they become crumbs. Assemble your parfait by alternating layers of yogurt, macerated strawberries, graham cracker crumbs and whipped cream until each glass is full. If you'd like, grate chocolate on top for garnish. Serve immediately.
- NotesCook's Note: Whisk the heavy whipping cream until soft and airy peaks form, but don't over whisk as this will give the whipped cream a stiff texture.
