Canned peaches and prepared corn muffin mix make this semi-homemade corn bread recipe easy to prepare.

Ingredients

  • 1 can peaches
  • 1 box corn muffin mix
  • 1/3 c. pecans
  • 1 large egg
  • 2 tbsp. butter

Instructions

  1. Preheat oven to 400 degrees F. Grease 8" by 8" metal baking pan. Drain peaches, reserving 1/3 cup juice. Chop peaches.
  2. In large bowl, stir corn muffin mix, pecans, egg, butter, and peach juice until combined, then fold in peaches. Spread in prepared pan. Bake 16 to 18 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes, then cut into squares.
