Recipe by Matt Duckor High-quality hard apple cider—not the overly sweet stuff you might have had—is one of fall's greatest beverages. Cognac only makes it better.

Ingredients

  • 6 ounces chilled hard apple cider, preferably semi-dry
  • 2 ounces cognac
  • 1 (3 x 1/2-inch) strip orange zest

Instructions

  1. Pour apple cider and cognac into a Collins glass filled with ice.
  2. Light a match, let it burn 2 seconds to get rid of excess sulfur, and hold it 3" over cocktail and 1" away from peel; the outside of the peel should face down, over the drink. Squeeze peel to release oils into drink.
  3. Rub flamed peel around rim of glass, then place peel in glass.
