Ingredients

  • 1 large onion, chopped
  • 2 cans (14-1/2 ounces each) chicken broth
  • 2 garlic cloves, minced
  • 3 tablespoons chili powder
  • 1-1/2 teaspoons ground cumin
  • 1/2 teaspoon dried oregano
  • 1 pound carrots, sliced
  • 1 pound red potatoes, cubed
  • 2 cans (14-1/2 ounces each) diced tomatoes
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (16 ounces) kidney beans, rinsed and drained
  • 1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
  • 2-1/2 cups water

Instructions

  1. In a Dutch oven or soup kettle, simmer onion in broth for 5 minutes. Add next six ingredients; bring to a boil. Reduce heat. Cover; simmer 10 minutes. Add remaining ingredients. Cover; simmer 20 minutes.
