Sweat the diced celery, carrot and onion in the liquid butter (or unsalted butter) on medium-high heat in a pot until translucent, 5 to 8 minutes. Add the pork, chicken, corn, mixed vegetables, diced tomatoes, diced tomatoes with chiles, chicken broth, beef broth, BBQ sauce, ketchup, Worcestershire, garlic powder, hot sauce, salt, pepper, bay leaves and potatoes and stir. Bring to a boil and then reduce to a simmer. Simmer the mixture, uncovered, on low heat for 2 to 3 hours, stirring often. Serve hot in a bowl.
