Ingredients

  • Cooking spray
  • 12 eggs
  • 12 slices bacon
  • 12 English muffins

Instructions

  1. Preheat oven to 350 degrees F.
  2. Spray muffin tin with nonstick baking spray. Crack eggs into the tin. Bake for 15-20 minutes, or until egg whites are set.
  3. Meanwhile, make bacon. Drain and set aside.
  4. Toast English muffins in oven until golden brown, about 5 minutes.
  5. Assemble sandwiches with egg, cheese, and bacon.
  6. Heat in oven to eat right away, or wrap in foil. If wrapping, write date and then freeze. Reheat in oven at 350 degrees F until warmed through!
