Gingery Cherry Lemon-Limeade - PCOS-Friendly Recipe

Ingredients
- 1 1/2 c. granulated sugar
- 1 (4") piece fresh ginger, thinly sliced
- 1 c. freshly squeezed lemon juice (from about 6 lemons)
- 1 c. freshly squeezed lime juice (from about 7 limes)
- 1 c. black cherry vodka
- 1 L cold club soda or seltzer
- Lemon wedges, for serving
- Fresh mint sprigs, for serving
Instructions
- Combine sugar, ginger, and 1 cup water in a small saucepan. Boil over medium- high heat, stirring occasionally, until sugar dissolves, 2 to 4 minutes. Cool completely; strain.
- Stir together ginger syrup, lemon juice, lime juice, and vodka in a large pitcher. Stir in soda just before serving.
- Serve over ice, garnished with lemon wedges and mint sprigs.
