Fresh greens, crisp cucumber, and a tangy creamy dressing are a simple but incredibly delicious start to any meal.
Ingredients
- 1/3 c. each plain lowfat yogurt and light mayonnaise
- 2 tbsp. lemon juice
- 2 tbsp. finely chopped scallions or chives
- 2 tbsp. water
- 1/4 tsp. salt
- .13 tsp. Pepper
Instructions
- Whisk dressing ingredients in small bowl; cover and refrigerate until ready to serve.
- Tear lettuce into bite-size pieces; toss with spinach, frisée and cucumber. In salad bowl, toss with dressing and serve.
