Sparkling Mint and Ginger Lemonade - PCOS-Friendly Recipe

Ingredients
- 2 cups water
- 1 cup sugar
- 1/4 cup fresh ginger, minced
- 1/4 cup fresh mint leaves
- 2 cups lemon juice, freshly squeezed
- 1 liter seltzer water, cold
Instructions
- Combine water, sugar, ginger, and mint in a medium saucepan and bring to a boil. Cover, remove from heat, and allow to steep until room temperature. Strain out solids and discard. Add ginger syrup to a pitcher and stir in lemon juice and seltzer. Serve over ice and garnish with mint.
