Ingredients

4 medium zucchini 2 tbsp. butter 1 clove garlic 1 tsp. grated lemon zest 2 tsp. fresh tarragon Salt and pepper, to taste

Instructions

With a vegetable peeler, cut zucchini into long, thin ribbons. Melt butter in a skillet, add zucchini, garlic, and lemon zest. Saute until tender, about 2 minutes. Sprinkle with tarragon and season to taste with salt and pepper.
