A rainbow of zucchini and bell peppers adorns these simple skewers. Serve extra marinade on the side for dipping.
Ingredients
- 8 wooden skewers
- 3 medium organic zucchini
- 2 organic red peppers
- 2 organic yellow peppers
Instructions
- Make skewers with chunks of zucchini and squares of peppers.
- To make the marinade: Whisk all the ingredients together in a bowl.
- Spoon the marinade over the zucchini and pepper skewers and place them on a grill. Cook until evenly browned on all sides.
