- 2 eggs
- 1 cup mashed ripe bananas
- 1/2 cup butter, melted
- 1/2 cup 60% cacao bittersweet chocolate baking chips
- 1/4 cup chopped pecans
- 1/4 cup chopped maraschino cherries
Instructions
- In a large bowl, combine the flour, sugar, baking powder and salt. Combine the eggs, bananas and butter; stir into dry ingredients just until moistened. Fold in the chocolate chips, pecans and cherries.
- Transfer to a greased 9-in. x 5-in. loaf pan. Bake at 350 ° for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
