Tracie's very own couscous salad, bound to be a great side at your dinner table.
Ingredients
- 1 box couscous (garlic parmesan), cooked
- 1 can chick peas
- 1 red pepper, finely chopped
- 1/2 Vidalia onion, chopped
- 1 English cucumber, peeled and seeded, finely chopped
- 1 tomato, chopped
- 1/4 cup fresh parsley, chopped
- 2 to 3 limes, juiced
- 1/4 cup olive oil
- 1/2 cup feta cheese, crumbled
Instructions
- In a bowl, add all ingredients. Toss and add oil or lime juice to taste.
