Ingredients
- 1 cup orange juice
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 2 teaspoons lemon juice
- 2 tablespoons butter
- 1/4 to 1/2 teaspoon rum extract
- 1 cup stewed fruit, optional
Instructions
- Combine orange juice sugar and cornstarch and cook over double boiler until thickened. Remove from heat and stir in lemon juice, butter and rum extract. Spoon over plated rice pudding. Garnish with optional stewed fruit. Makes 1 1/2 cups.
