Ingredients

  • 1 lb. penne
  • 1/2 lb. boneless skinless chicken tenders
  • 1 container Trader Joe's Pesto
  • 1 jar roasted red and yellow peppers
  • kosher salt
  • Grated Parmesan, for garnish

Instructions

  1. In a large pot of boiling salted water, cook pasta according to package directions until al dente. Drain, reserve 1/2 cup pasta water, and return to pot.
  2. Meanwhile, in a large skillet over medium heat, sear chicken until cooked through, 6 to 8 minutes, flipping once.
  3. Add pesto, roasted red peppers, chicken, and 1/4 cup pasta water to pot and toss until combined and creamy. Season with salt and garnish with Parmesan.
