Ingredients
- 3 tbsp. olive oil, divided
- 1/2 c. plain bread crumbs
- 1/4 c. finely chopped walnuts
- 3 cloves garlic, finely chopped
- 3 tbsp. chopped parsley
- 1 lb. Cooked spaghetti
- 4 oz. blue cheese, crumbled
- 3 tbsp. lemon juice
- 1/2 c. pasta water, reserved
- kosher salt
- Black pepper
Instructions
- In saucepan, in olive oil on medium, cook bread crumbs, walnuts, garlic, and parsley 5 minutes or until well-toasted, stirring.
- Toss spaghetti with blue cheese, lemon juice, remaining olive oil, and pasta water. Fold in crumb mixture and salt and pepper to taste.
