Ingredients

  • 3 tbsp. olive oil, divided
  • 1/2 c. plain bread crumbs
  • 1/4 c. finely chopped walnuts
  • 3 cloves garlic, finely chopped
  • 3 tbsp. chopped parsley
  • 1 lb. Cooked spaghetti
  • 4 oz. blue cheese, crumbled
  • 3 tbsp. lemon juice
  • 1/2 c. pasta water, reserved
  • kosher salt
  • Black pepper

Instructions

  1. In saucepan, in olive oil on medium, cook bread crumbs, walnuts, garlic, and parsley 5 minutes or until well-toasted, stirring.
  2. Toss spaghetti with blue cheese, lemon juice, remaining olive oil, and pasta water. Fold in crumb mixture and salt and pepper to taste.
