Here is the recipe:
MAXIMUM MEXICAN BURGER
6 Bolillo rolls or bun of your choice
1 lbs. Chorizo
1 lbs. 5% ground beef
1 egg
1/2 cup bread crumbs
6 hatch or anaheim or Ortega chilis
6 yellow jalapeños
6 thick slices of queso quesadilla cheese or mexican cheese of your choice
can of sliced jalapeños/carrots (diced up)
1 large jar of ketchup
1 can of chipotles in adobo sauce
3 avocados
Directions:
Sweat chilis: grill or brown chilies in oven until outside is burnt. Just the skin and not the meat. put in bowl and cover with plastic wrap for 15 minutes. Peel skins off when cool.
Chipotle Ketchup: blend chipotle in adobo sauce with entire bottle of ketchup.
Patties: mix egg, bread crumbs, chorizo, beef and jalapeño/carrots together. Form patties. Grill to liking. melt cheese on top of patties last 2 minutes.
Prepare: Roll, sweated chills, patty/cheese, avocado, chipotle ketchup, top roll. Enjoy.
