A very rich and nice dal preparation Sultani dal, mughlai influenced simple tadka dal with extra flavors of somky pan leaf and charcoal, Specially served for Kings. http://www.vahrehvah.com/dal-sultani-1 Ingredients: Tour dal 1 Cup Butter 1 Tablespoons Ghee 1 Tablespoons Cloves 3 Numbers Cardamom 2 Numbers Cumin seeds 1/2 Teaspoons Garlic 4 Clove Onion 1 Numbers Salt To taste Turmeric 1 Pinch Green chilli 3 Numbers Milk 1/2 Cup Yogurt 1/2 Cup Sugar 1/2 Tablespoons Saffron water 1 Teaspoons Cream 1 Tablespoons Spring onions 1 Tablespoons Betel leaf 1 Numbers Charcoal 1 Numbers Garam masala 1 Teaspoons Directions: 1. First boil the tour dal and keep it aside. Heat butter and ghee in a pan add cloves, cardamom, cumin seeds when cumin seeds splutter and add chopped garlic, saute it then add chopped onions, salt, turmeric, green chilli saute it for few minutes. 2. Then add boiled tour dal, once the dal is cooked add ½ cup of milk, beaten yogurt put the lid on and let it comes to boil. Adjust the seasoning and add 1 tsp of sugar, saffron water, cream, chopped spring onions. In a steel bowl put the betel leaf and put this bowl on top of dal, and a small piece of charcoal on it, sprinkle pinch of garam masala powder while smoking pour 1 tsp of ghee on it and immediately cover it and switch off the flame and keep for ten minutes. 3.Remove the steel bowl and mix the dal once. Serve it with rice.
