Matki chi usal - maharashtrian dish presents a spicy and authentic recipe to prepare the popular maharashtrian lentil preparation, usal. The sprouted lentils like matki is cooked with onion, tomato, chillies and coconut and enjoyed with bhakris or rice flour rotis.

Ingredients:
Mustard seeds 1/2 Teaspoons
Cumin seeds 1/2 Teaspoons
Onion(chopped) 1 Teaspoons
Garlic(crushed) 1/2 Teaspoons
Ginger(crushed) 1/4 Teaspoons
Curry leaves 1 Springs
Green chillies(chopped) 1 Numbers
Asafoetida 1 Pinch
Turmeric powder 1/2 Teaspoons
Red chilly powder 1 Teaspoons
Red chilly powder(Maharashtra) 1 Teaspoons
Moth beans-Matki(sprouted beans) 1 Cup
Tomato(chopped) 1 Numbers
Coriander leaves(chopped) 1/4 Bunch
Salt 0 To
Oil 2 Tablespoons
Directions:
1. Heat oil in pan and add mustard seeds, cumin seeds, onion, garlic, ginger, curry leaves and saute it. 2. On low flame add green chillies, asafoetida, turmeric powder, red chilly powder, red chilly powder(Maharashtra), moth beans and saute it. 3. Add water and mix thoroughly and place the lid and cook it for 15 mins. 4. Atlast add tomato, coriander leaves and mix thoroughly and cook it. 5. Now the dish is ready to serve with rice.
