This easy microwaved 'bread' turns out perfect every time.

Ingredients

1 cup whole ground flax 1/2 tsp baking soda 1/2 tsp baking powder 1/2 cup chopped walnuts 2/3 cup water 2 tbsps olive oil 2 servings 1 packet sweetner 2 large eggs 1 tbsp vanilla

Instructions

1. Ground 1 cup of flax seeds. 2. In bowl #1: add ground flax, baking soda and baking powder. Mix well. 3. In bowl #2: add eggs, water, oil, sweetener (lik Stevia or Splenda) and vanilla. Mix well. 4. Add walnuts to dry ingredients. 5. Grease a microwave casserole dish - 8" diameter. 6. Mix both dry and wet ingredients together. Pour into greased microwave casserole dish. 7. Microwave on high for 5 minutes. 8. Turn upside down on to a baking rack. Cool. Turn over and serve slices. (Great with cream cheese & berries).
