2 medium zucchinis, 2 cups of ricotta cheese, 1 cup of shredded mozzarella cheese, 1/2 cup of grated Parmesan cheese, 1 egg, 2 cups of marinara sauce, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, 1 tablespoon of olive oil

Instructions

1. Preheat your oven to 375 degrees F (190 degrees C). 2. Slice the zucchinis into thin strips. 3. In a bowl, mix ricotta, mozzarella, Parmesan, egg, salt, and pepper. 4. Spread a layer of marinara sauce in the bottom of a baking dish. 5. Layer zucchini strips, cheese mixture, and marinara sauce. Repeat until all ingredients are used, ending with a layer of cheese. 6. Cover with foil and bake for 25 minutes. 7. Remove foil and bake for an additional 25 minutes until cheese is golden and bubbly.
