Ingredients

  • 1 whole Celery Root, Peeled And Diced
  • 3 whole Parsnips, Peeled And Diced
  • 6 whole Carrots (varied Colors If You Can Find Them), Peeled And Diced
  • Other Root Vegetables, Peeled And Diced
  • Olive Oil, For Drizzling
  • Salt And Pepper, to taste

Instructions

  1. Preheat oven to 375 degrees.
  2. Throw diced vegetables on a large baking sheet and drizzle with olive oil, then sprinkle with salt and pepper. Use hands to toss, then arrange in a flat layer on the pan.
  3. Roast for 30 to 40 minutes, or until vegetables are golden brown. Allow to cool to room temperature and eat as a snack, or serve them as a side dish with pork chops, roasted chicken, etc.
