Ingredients

  • 8 tablespoons (1 stick) good butter, softened
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon granulated garlic
  • Kosher salt and black pepper
  • 8 thin slices white bread, crusts removed
  • 1 English cucumber, thinly sliced

Instructions

  1. In a small bowl, mix together the butter, chives, granulated garlic and some salt and pepper. Spread the bread slices with the herb butter. Divide the cucumbers between 4 of the slices and season with salt and pepper. Top with the other 4 slices to make 4 sandwiches. Cut the sandwiches into triangles to make 8 mini sandwiches.
