Ingredients

  • 4 ounces angus fillet
  • 4 ounces grass-fed fillet
  • 4 ounces prime fillet
  • Melted butter, for coating
  • 2 ounces steak seasoning
  • 1 ounce clarified herb butter
  • 1 1/2 ounces demi glace
  • Grilled heirloom baby carrots, for serving

Instructions

  1. Preheat an oak-fired grill to 500 degrees F. Coat each piece of steak with butter and then sprinkle with the seasoning blend. Set the steak over hottest part of the grill and cook to achieve grill marks on each side. Then move the steaks to a cooler area of grill and cook to desired doneness, about 4 minutes on each side for medium rare. Plate the steaks in order, angus, prime and then grass, from right to left. Finish with a drizzle of clarified butter and demi glace on each steak and serve with the grilled baby carrots.
