Recipe by Rhoda Boone This basic recipe makes the only dough you need for roll-and-cut or slice-and-bake cookies (including sandwiches). It's excellent on its own or perfect as a base for mixing in other flavors.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • 2 sticks (8 ounces) unsalted butter, at room temperature
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium bowl, whisk flour and salt together. Place butter and sugar in the bowl of a stand mixer and beat on high speed until well combined, about 3 minutes. Add egg and vanilla and beat until just combined. Reduce speed to low and gradually add the flour mixture; mix until just combined.
