- 1/2 seedless (English) cucumber
- 3 tbsp. orange juice
- 2 tbsp. extra-virgin olive oil
- 1 tsp. Hot pepper sauce
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 2 tbsp. toasted pine nuts
Instructions
- Toss shrimp, Granny Smith apple, cucumber, orange juice, olive oil, and hot pepper sauce. Arrange on two dinner plates, sprinkle with salt and pepper, and, if desired, garnish with toasted pine nuts.
