Ingredients
- 2 cups Fresh Blackberries
- 4 Tablespoons Water
- 1/3 cup Sugar
- 2 cups Vanilla Bean Ice Cream
- 4 cups Club Soda
- Fresh Mint For Garnish
Instructions
- Place the berries and water in a blender and puree until smooth. Pour the mixture over a fine mesh sieve that is fitted over a bowl or large measuring cup to strain the blackberry seeds. Press any extra puree through the mesh with a spoon.
- Take 1/3 cup of the puree and place it in a saucepan over medium-low heat. Add the sugar and whisk constantly until the sugar dissolves and the mixture is simmering. Remove it from the heat and let it cool, them combine it with the remaining juice.
- Fill large glasses with a couple scoops of ice cream. Pour the blackberry mixture over top. Fill the remaining glasses with club soda and stir. Serve immediately.
