Ingredients

  • 1/3 c. plus 2 tbs. heavy cream
  • 2 tbsp. sugar, divided
  • 2 c. cold brew coffee

Instructions

  1. In a liquid measuring cup, mix together 1/3 c. of cream with 1 tbsp. sugar.
  2. Divide between 6 popsicle molds, pouring just a small amount into each mold. Freeze for 1 hour, or until frozen.
  3. In another liquid measuring cup, whisk together coffee with remaining sugar and heavy cream. Divide between the molds (with the now frozen cream layer). Insert lid (or popsicle sticks) and freeze for 6 hours, or until frozen.
  4. Before serving, run the molds under warm water to loosen the pop.
