  • 16 oz. castellane (long pasta shells)

Instructions

  1. Make Pasta: Bring a large pot of lightly salted water to a boil. Add pasta and cook as package directs.
  2. Meanwhile, make sauce: Put flour and salt in a large saucepan. Gradually whisk in milk until blended. Whisk over medium-high heat 5 minutes, or until boiling. Reduce heat and simmer, uncovered, 5 minutes, or until slightly thickened. Add cheese and stir until melted. Add chiles and Mexicorn; stir over low heat 2 minutes, or just until hot.
  3. Drain pasta and return to pot. Add sauce and toss to coat. Serve immediately, topping with salsa and cilantro.
