Here's the recipe:
12 oz · box Tri-Color Rotini pasta (uncooked)
1 bunch · Radishes
1 medium · Cucumber
2 ¼ oz · can Sliced Black Olives
1 pints · cherry or grape sized Tomatoes
For the Greek vinaigrette:
1 cup · Lemon Juice
½ cup · Olive Oil
3 teaspoon · Oregano
½ teaspoon · Salt
1 teaspoon · ground Black Pepper
*** If you're not VEGAN then feel free to add FETA CHEESE to the salad.
Directions
1 Cook pasta and drain. Set aside to cool. Do not overcook
2 Wash radishes thoroughly then halve and thinly slice about 3/4 cup or 5 radishes.
3 Rinse, peel, halve and slice one medium cucumber. Approximately 2 cups
4 Drain and rinse can of sliced olives.
5 Rinse and halve tomatoes.
6 Very gently mix together rotini pasta, radish slices, cucumber slices, tomatoes, and black olives (using clean hands works best).
7 In a separate bowl, mix together olive oil, lemon juice, oregano, salt and pepper. Pour the dressing on the salad and mix gently.
8 Cover and refrigerate at least 1 hour. Serve chilled.
