Ingredients:
Egg plant (baigan) 1 big
Olive oil 1 tb
Cumin seeds ¼ ts
Garlic chopped 1 ts
Onion chopped 1 n
Salt
Turmeric pinch
Chilly powder 1 ts
Pepper powder ½ ts
Tomato puree 1 tb
Eggs 4 n
Lime juice 1 tb
Garam masala 1 ts
Parsley chopped 1 ts
First roast the baigan on the stove top and let it cool down then remove the skin of the baigan and mash it and keep it aside.
Heat olive oil in a pan add cumin seeds, chopped garlic, add chopped onions, salt, turmeric, cook this till onions are soft, then add chilly powder, pepper powder, tomato puree and add mashed baigan, mix it well and pour the egg mixture on the top of the baigan bharta mix it well and add lime juice, garam masala powder, add chopped parsley and put the lid on and switch off the flame.
Serve this with chapathi.
