Ingredients

  • 2 lb. zucchini, thinly sliced
  • 1 1/2 c. freshly grated Parmesan
  • Coarse salt

Instructions

  1. Preheat oven to 425 degrees F and line two baking sheets with parchment paper. Arrange zucchini slices on baking sheets and top each with a generous amount of Parmesan. Season with salt.
  2. Bake until deeply golden and crisp, about 20 to 25 minutes.
  3. Serve hot.
