Ingredients

  • 1/4 c. chicken broth
  • 1/2 bottle Corona
  • 2 bell peppers, sliced
  • 1 white onion, sliced
  • 1 tsp. cumin
  • kosher salt
  • Freshly ground black pepper
  • 1 rotisserie chicken, shredded
  • 2 limes
  • Medium-sized flour or corn tortillas
  • Fresh salsa
  • shredded Mexican cheese

Instructions

  1. In a sauté pan over medium heat, bring broth and Corona to a simmer. Add peppers and onions, stirring every so often and cooking until softened, about 2 to 3 minutes. Season with cumin, salt, and pepper.
  2. Stir in chicken. Squeeze juice from both limes on top and cook 2 to 3 minutes more, stirring the mixture to coat the chicken thoroughly.
  3. Add filling to each tortilla, topping with salsa and cheese.
