These simple tacos call for half a Corona—sip the rest while you cook!
Ingredients
- 1/4 c. chicken broth
- 1/2 bottle Corona
- 2 bell peppers, sliced
- 1 white onion, sliced
- 1 tsp. cumin
- kosher salt
- Freshly ground black pepper
- 1 rotisserie chicken, shredded
- 2 limes
- Medium-sized flour or corn tortillas
- Fresh salsa
- shredded Mexican cheese
Instructions
- In a sauté pan over medium heat, bring broth and Corona to a simmer. Add peppers and onions, stirring every so often and cooking until softened, about 2 to 3 minutes. Season with cumin, salt, and pepper.
- Stir in chicken. Squeeze juice from both limes on top and cook 2 to 3 minutes more, stirring the mixture to coat the chicken thoroughly.
- Add filling to each tortilla, topping with salsa and cheese.
