Ingredients

  • 2 lb. Yukon gold or baking potatoes
  • 1 1/2 c. shredded sharp Cheddar
  • 1 jar Alfredo sauce
  • 1/3 c. chopped chives or scallions
  • 1/2 c. milk
  • .13 tsp. each cayenne and
  • ground nutmeg

Instructions

  1. Heat oven to 350 ºF. Coat shallow 2-qt baking dish with nonstick cooking spray.
  2. Thinly slice potatoes. Reserve 1/4 cup cheese. Mix potatoes with remaining ingredients in large bowl. Spoon into prepared baking dish. Cover with foil; bake 1 hour.
  3. Remove foil from baking dish; sprinkle with reserved cheese. Bake 20 to 30 minutes more until potatoes are tender and mixture is bubbly. Let stand 15 minutes.
