Recipe by Lindsay Funston We've taken the classic chocolate wafer icebox cake and made it part cheesecake.

Ingredients

  • 5 1/2 c. heavy cream
  • 2 8-ounce packages cream cheese, softened
  • 2 9-ounce boxes chocolate wafer cookies
  • 2 c. chopped semisweet chocolate
  • 1/3 c. crushed oreos

Instructions

  1. Make cream cheese mixture: In a stand mixer fitted with a whisk attachment, beat 3 cups heavy cream until stiff peaks form. Beat in cream cheese until fluffy.
  2. On a cake stand, arrange chocolate wafers in a circle of six. Place one wafer in the center. Use a rubber spatula to spread on cream mixture with enough cream to cover. Arrange next layer of wafer cookies on top, making sure to overlap the cookies, not placing them directly on top of the previous layer.
  3. Continue layering wafer cookies and cream cheese mixture until you run out of both.
  4. Transfer to the refrigerator overnight.
  5. When ready to serve, make ganache: In a small saucepan, warm remaining cream until simmering. Place chocolate in a heatproof bowl and pour over cream. Let sit 3 minutes, then fold chocolate into cream until completely smooth and shiny.
  6. Pour ganache over cake and top with crushed Oreos.
