Ingredients

  • 1 lb. rice noodles
  • 1/2 c. low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tsp. ground ginger
  • 1 tbsp. extra-virgin olive oil
  • 1 large onion, diced
  • 2 stalks celery, thinly sliced
  • 1/2 head cabbage

Instructions

  1. In a large pot of boiling water, cook noodles according to package directions until al dente. Drain.
  2. In a small bowl, combine soy sauce, garlic, and ground ginger.
  3. In a large skillet, heat oil over medium-high heat. Add onion, celery, and cabbage and cook until tender, stirring occasionally, 6 to 8 minutes.
  4. Add noodles to skillet and soy sauce and stir until fully coated.
