Ingredients

  • 2 cups water
  • 5 teaspoons sugar, divided
  • 1/3 cup pearl tapioca (not granulated)
  • 1 cup brewed black tea
  • 2 tablespoons milk
  • 1/2 cup ice, about 4 cubes

Instructions

  1. In a small pan, bring water to boil; add 1 teaspoon sugar and stir until dissolved. Reduce heat, add pearl tapioca, and cook 20 minutes. Drain the mixture through a strainer and rinse the tapioca. Refrigerate for 15 minutes or until set.
  2. In a cocktail shaker, combine tea, milk, and remaining 4 teaspoons of sugar. Stir until combined, then add ice cubes and shake. Add prepared tapioca to bottom of a tall glass and strain tea over tapioca.
