Ingredients
- 1 box rice primavera mix (with spring vegetables, Cheddar and seasoning packet)
- 2 c. frozen green peas
- 7 large eggs
- 8 oz. ham
Instructions
- Bring 2 cups water to boil in a large skillet. Add rice and seasoning packet. Stir in frozen peas. Reduce heat, cover and simmer 20 minutes or until water is absorbed.
- Stir in eggs and ham. Press down lightly with a broad spatula. Cover and cook 10 minutes or until eggs are just set. Serve with salsa, chili sauce or ketchup.
