Ingredients

  • 1 box rice primavera mix (with spring vegetables, Cheddar and seasoning packet)
  • 2 c. frozen green peas
  • 7 large eggs
  • 8 oz. ham

Instructions

  1. Bring 2 cups water to boil in a large skillet. Add rice and seasoning packet. Stir in frozen peas. Reduce heat, cover and simmer 20 minutes or until water is absorbed.
  2. Stir in eggs and ham. Press down lightly with a broad spatula. Cover and cook 10 minutes or until eggs are just set. Serve with salsa, chili sauce or ketchup.
