Ingredients

  • 1 1/3 lb. 80% lean ground beef, formed into 4 patties (1/3 lb. each)
  • kosher salt
  • Freshly ground black pepper
  • 4 slices cheddar
  • 4 potato hamburger buns
  • 1/2 c. ketchup
  • 1 chipotle pepper, chopped
  • 4 slices red onion
  • green leaf lettuce
  • 1 c. guacamole

Instructions

  1. Preheat grill or grill pan over high heat. Season burgers with salt and pepper. Cook for 2 minutes per side; add cheese and cover until melted. Transfer to a paper towel–lined plate to rest.
  2. Meanwhile, in a small mixing bowl combine ketchup and chipotle.
  3. Layer burgers on potato roll with red onion, lettuce, guacamole, and chipotle ketchup.
