1 lb mixed seafood (shrimp, scallops, clams), 1 can diced tomatoes, 1 onion, 2 cloves garlic, 1 bell pepper, 1 zucchini, 2 tbsp olive oil, Salt and pepper to taste, Fresh parsley for garnish

Instructions

1. Heat oil in a large pot. 2. Add onion, garlic, bell pepper, and zucchini, sauté until softened. 3. Add tomatoes and bring to a simmer. 4. Add seafood and cook until done. 5. Season with salt, pepper, and garnish with parsley.
