1. Roast the beef bones in a 375°F (190°C) oven for 30 minutes. 2. In a large pot, combine the roasted bones, ginger, garlic, onion, carrots, celery, apple cider vinegar, and water. 3. Bring to a boil, then reduce to a simmer and cover. 4. Simmer for 12-24 hours. 5. Strain the broth and season with salt and pepper. 6. Serve warm.
