Ingredients

1 cup quinoa (170g), 2 cups water (500ml), 1 lb chicken breast (450g), 2 cups broccoli florets (180g), 1 cup shredded cheddar cheese (115g), 1 tsp olive oil (5ml), Salt and pepper to taste

1. Preheat the oven to 375°F (190°C). 2. Rinse the quinoa under cold water. 3. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover and simmer for 15 minutes. 4. While the quinoa is cooking, heat the olive oil in a skillet over medium heat. Add the chicken and cook until no longer pink. 5. In a large bowl, combine the cooked quinoa, cooked chicken, broccoli, and half of the cheese. Season with salt and pepper. 6. Transfer the mixture to a baking dish and sprinkle with the remaining cheese. 7. Bake for 20 minutes, or until the cheese is melted and bubbly.
